Welcome to the kitchen of most delicious home-cooked Indian foods and delicacies..Presenting today the classic samosa recipe..Let me first explain about this Indian fritter which is stuffed with spicey boiled potatoes mixture…This is one of the most famous street food across India and the recipe to make this yum ia not too complicated..As december is here, the cravings for delicious food has increased..If you ever thought of making samosa at home and canceled because it must have felt complicated but let me explain you I felt the same way but it is simple to make ..It is the most delicious deep fried Indian snacks selling across the streets as well as at fancy restaurants these days.
The recipe I have brought today is absolutely simple and it is the classic one..No more wondering about how to make samosa, because the simple yet most delicious recipe is here..I feel samosa tastes best with tea..well!!you can definitely have it with your favorite chutney or sauce..Parsley chutney or tamarind chutney both goes really well samosa..Don’t forget to include tomato catch-up if you like it.
Before going through the ingredients and method to make samosa let me tell, It is a two recipe process combined as one . One for the dough and the other for the stuffing..So let’s start making the yum.
7 to 8 medium sized boild potatoes
9 to 10 chopped garlic
1 tea spoon grated ginger
1/2 cup chopped onion
1 tea spoon chilli powder
1/3 teaspoon turmeric powder
1 teaspoon mustard seeds
1 tablespoon salt/according to your taste
3 table spoon oil
Some chopped parsley leaves for a fresh flavor
Ingredients to make dough
2 cups of all purpose flour
1/2 cup oil
1 table spoon salt
1 teaspoon carom seeds/ajwain/kala jeera
Oil to deep fry
Normal water as required to knead the dough
Let’s go through the process of making samosa by preparing the dough first..Take a container, add flour/maida, salt and carom seeds/black cumin seeds and oil..mix all the ingredients using hands well..Then slowly add water to make a tight dough..knead well..Make sure to make the dough tighter than the regular tortilla dough for the perfect texture..Now keep it aside for 10 minutes..
To make aloo masala or the stuffing of samosa, Firstly mash the potatoes..You don’t have to make it creamy by mashing too much, just a soft mash will be great.Now put a pan on the gas, add oil, let the oil be hot.then add the mustard seeds, as soon as it starts to pop, put the garlics, ginger and chopped onions..cook in medium flame for just 1 minute..now add the turmeric powder and chilli powder..mix well..Then add the mashed potatoes and salt..mix well using a spatula in medium flame..cook for three to four minutes by flipping the potatoes gently..Now this stuffing is very classic ..Sprinkle some parsley leaves and mix well..
Now let’s go back to the dough..knead the dough well for 2 to 3 minutes well for an even texture without any cracks..make 2 inches balls out of it..rol it up as a medium sized tortilla by sprinkling some dry flour over it for an easy rolling..cut it from the middle just like this.
Somehow in a rush I have cut it uneven but you have to cut it exactly from the middle to get equal shapes..Now Take the half part of it and wide roll it as a triangle by pressing the joints to not let any stuffing come out.now fill it with 1 table spoon of stuffing atleast and clip the remaining edges together for the correct samosa shape..This is a very classic samosa shape but also you can shape it according to your choice..you can make ring or momo shaped samosa too.
Now press the openings together to give it the samosa shape..Put the frying pan on the gas..add oil and let it be hot.. Then put samosa one by one to deep fry, don’t suffocate by adding too much..make sure to add good quantity of oil to let the samosa deep well in it.. deep fry in medium flame until it turns light golden..remove it to oil paper to get rid of any access oil and now grab it with your favorite sauce.Yumm!!This delicious delicious food is just yum and should not be missed.
