How to make began bhrma/how to cook eggplants

This is a very delicious began bharma recipe fried in chopped tomatoes and other spices

  • 3 to 4 long begans/eggplants

  • 2 small chopped tomatoes

  • 1 tea spoon chilli powder

  • 2 table spoon coriander powder

  • 1 teaspoon garam masala(optional)

  • 1/2 teaspoon turmeric powder

  • 1 and 1/2 tea spoon salt

  • 4 table spoon oil

  • 1 table spoon mustard

  • 1 table spoon grated ginger


  • Before going through the detailed method of began Bharma recipe.I wanna introduce this delicacy as one of the most delicious dishes made using began or eggplants..If you are a lover of brinjal or eggplants then trying on this recipe is a must..I personally love this with daal Chawal and also with roti/tortilla..It is a simple recipe and made in a simple way..While making began bharma we have often seen filling the spices inside each of the begans/eggplants and then frying it.Making began bharma that way also tastes really good but the recipe I have brought today is made by making puree like texture with tomatoes and spices and then sautéing it in that mixture..It taste really different and nice also less time consuming.So, let’s start making the yumm.
  • Firstly wash off the eggplants/begans well..then long cut into big pieces by giving scratches in between.The main reason behind giving scratches is, to let the spices absorb well from within just like this.
  • Now put a pan on the gas..Let it be dry completely.Add mustard oil..let it be hot until the bubbles formed are completely gone..I mostly use mustard oil in my curries because it adds a very natural flavor and color to the veggies.Now put the mustard seeds into it..let it pop.Add chopped tomatoes and ginger into it..mix well..then add the spices like the turmeric powder,chilli powder, coriander powder, garam Masala and salt. Mix well using a spatula..Always remember to use a spatula while cooking eggplants to avoid messing it up and holding the texture well because eggplants gets too soft easily.Now mix the spices well and cook in low to medium flame until the tomatoes becomes soft..stir the mixture in a gentle mashing like motion for a little puree like texture.
  • As the mixture becomes soft..add the eggplants and mix well using the spatula.
  • Now let it be cooked in high flame for a good roast and absorption of spices for 5 to 6 minutes by flipping the eggplants time to time..Then Lower the flame, close the lid and let be cooked until the eggplants becomes really soft to touch..
  • Again cook for 2 minutes more in high flame and switch off the gas.And the most delicious spicey eggplants is ready..The taste is amazing.Enjoyy.
