Welcome to the delicious vegan kitchen.No matter what the season is, the classic mix veg always tops the menu when it comes to daily home cooked food..This is one of the most tastiest and easy recipe that I brought today because it is just too good at taste..
While cooking, its not just the the ingredients that matter but also the timing and the chopping matters too..while cooking mix veg I have chopped the veggies into really small pieces as you can see in the picture and the idea behind it was, the spices gets well absorbed when the pieces are smaller giving the curry an even taste.

If you like to try Indian food and dishes and curious to know more about the daily home-cooked food then you are at the right place..It feels too good to write on these yummy vegan food recipes which takes least efforts to make but at the same time turns out really tasty.People cook mix veg in so many ways, some like it more spicier to some like it a little simpler..I learned mix veg from my mom because she cooks it too yummy.And I putting on the exact recipe.
1 small chopped cabbage
1 cup small chopped pumpkin
2 medium small chopped potatoes
1 cup small chopped carrot
1 cup small chopped tomatoes
1 tablespoon ginger garlic paste
1 teaspoon turmeric powder
1 and 1/2 teaspoon red chilli powder
1 teaspoon kashmiri red chilli powder
1 teaspoon garam masala
1 tablespoon salt
1 teaspoon cumin seeds
4 table spoon mustard seeds
Take a pan..put it on high flame and add oil..let the oil be really hot to avoid any accessive flavor of mustard…then put cumin seeds..roast well..add the chopped tomatoes into it..mix well using a spatula.Then put ginger garlic paste,turmeric powder,chilli powder,garam masala and kashmir red chilli powder all at once.Mix all the ingredients well.Cook in medium flame until the tomatoes become soft in texture.
Now add all the chopped veggies into it.Then add salt..mix well again..pour 1/2 cup of water and lower the flame when it comes to boiling point..cook it well by closing the lid until all veggies turns soft..it takes 12 to 15 minutes and there you go..the tasty mix vegetable is fully ready to be served.Combine with rice or roti and you will never regret the taste and texture..
