Welcome back to the delicious Indian kitchen!!Today I have brought a summer special recipe.I would say it is one of the best recipe for lunch to beat the summer heat.Curd rice is one of the most simple to make and at the same time, it tastes really good.This is the month of may and so the heat is at its peak, we all swear by all the food items with cooling properties like the fruits, juices and etc.
Curd rice is basically a south Indian cuisine but also it is famous across some the other states like odisha and west Bengal.There is no magic lies in cooking this summer cool dish.The ingredients used are simple enough.It is usually combined with some dry curry ike the aloo zeera or any other dry veggies.I would say this dish is the best bet if you are in a hurry.
Let’s start making curd rice quick by listing the simple and easily available ingredients.
1 bowl cooked rice
1 medium sized very small chopped onions
1/2 cup finely chopped cucumber(optional)
1 cup fresh curd
1 tablespoon oil
1 teaspoon mustard seeds
1 dry red chilli
1 and 1/2 teaspoon salt
To make curd rice its always better to cook rice a little bit more softer than the other days.Now take the rice out using a straining spoon into a bowl.
Now add the curd, salt and chopped onions into the rice and mix well using a spoon.Now its time to give it a quick saute using oil, chilli and mustard seeds.Take a oval spoon.add oil and heat a bit, then add the mustard seeds and red chilli..pour the oil all over the rice..gently mix.And this quick to make dish is ready.
