Pumpkin curd salad is one of my most favorite dish which is not only healthy but also super tasty.This recipe is a healthy combination of pumpkin, curd,onions and some leafy greens.It came out really nice while I was trying food fusion.This dish inspires me to do more trial and error with food to discover some of the other dishes like this.

Pumkin curd salad is a refreshment in your food during this harsh summer.Combining pumpkin and curd together came out really well.The other major veggies added are onions and some leafy greens.You can have this yum with rice or roti/tortilla.
1 cup small chopped fresh unpeeled pumpkin
1/2 cup onions
2 bunches of your favorite leafy greens
1 cup fresh curd
2 tablespoon mustard oil
1 teaspoon chilli flakes
1 teaspoon mustard seeds
Salt to taste
1 teaspoon sugar
1 teaspoon roasted cumin powder
The process to make pumpkin curd salad is simple.Start by compiling the veggies together for easy cooking.
Put a pan on the gas.let it be dry completely and then add oil.Using mustard oil gives the dish a very warm flavor.
As the bubbles from oil disappears completely, add the mustard seeds.let it pop and then add the chopped onion and Chilli flakes.roast in medium game for 1 minute and then add chopped pumpkin and leafy greens.
Mix well.Close the lid by sprinkling some water to cook the veggies quick.Wait until the pumpkins are soft to touch.As soon as the vegetables are ready, add salt.Mix well and switch off the gas.
Now let’s prepare the curd.Take a container, add the curd, sugar, 1 teaspoon salt and cumin powder.Use a spoon to mix really well.Now put the cooked veggies on top of the curd in good quantity.And the delicious pumpkin curd salad is ready.It tastes more delicious when cools down.Put it in fridge for 15 minutes before serving.👍👍
