Ingredients

1 and 1/2 cup chopped pumpkins

1 cup chopped aloo/potato

2 chopped onions

3 tablespoon mustard oil

1 and 1/2 teaspoon chilli powder

1/2 teaspoon turmeric powder

1 tablespoon coriander powder

1 and 1/2 teaspoon mustard seeds

So, these are the only ingredients needed to make this roasted pumpkin,potato and onion dry curry.

Directions

Take a pan or kadhai.Let it be dry completely and then add oil.Using mustard oil is best to roast veggies as it gives a very natural flavor of mustard and also complements in bringimg out a natural warm color in the dish.

Let the oil be hot until the bubbles are gone completely to avoid any accessive flavor.Then add the mustard seeds.wait for it to pop.Now put the chopped pumpkins,potatoes and onions.Mix well.

Now keep flipping time to time using a spatula until the edges turns golden a bit.Then add Chilli powder and coriander powder.Mix well.
