Bhindi masala is a delicious recipe that can be served with rice or roti/Flatbread.When cooked the right way ,okra tastes really great.In some areas it is also cooked with tomatoes by deep frying it.The most important step to keep in mind while cooking okra is to make it dry.So before cooking it, make sure to wash off well and dry out using a cotton cloth to avoid any contact with water.As water exaggerates the slimy texture of bhindi/okra.So let’s start making this delicious okra curry with step by step directions.
Ingredients
8 to 10 chopped okra/bhindi(long chopped)
2 medium sized tomatoes
2 medium sized onions
6 to 8 garlics
A small piece of ginger
2 green chillies
1 inch cinnamon stick
1 bay leaf
A pinch of cardamom powder
3 tablespoon fresh milk cream
1/2 teaspoon turmeric powder
1 teaspoon chilli powder
1/2 teaspoon garam masala(optional)
1 teaspoon besan/gram flour
2 pinches of hing/asafoetida
Oil to fry the okra
3 tablespoon oil for sauté
1 teaspoon mustard seeds
Note-
The ingredients listed above are according to the quantity of okra used.The ratio of ingredients can be adjusted according to your requirement.
Preparation
Keep your okra chopped,make a puree of tomato,garlic,ginger and green chili.chop the onions.Keep your ingredients ready for a hassle free cooking.
Directions
Start the process of making bhindi masala curry by putting a pan on the gas to fry the okra.Let the pan be completely dry.Add oil and heat in medium flame until just warm.Then add the asafoetida for an aerometic flavor.Put the chopped bhindi and let it be fried well in low to medium flame.
Add 4 to 5 tablespoon oil to fry the okra well.You will see it sqeezing a bit as soon as it gets cooked.Now remove the okra into a container and in the same pan, add mustard seeds and let it pop.Note-If the oil seems too less to cook the spices, do add 1 tablespoon extra.Now add the cinnamon stick and bay leaf.Add chopped onions and cardamom powder.Mix well.Cook the onions until it turns light golden.
As soon as the onions are well cooked,add the tomato puree.
Mix well.Add turmeric powder,chilli powder,garam masala and 1 teaspoon besan/gram flour.Mix all the ingredients well in low to medium flame.Cook until the oil separates from the spices.This is a sign that the water content has been dried up and the spices are well cooked.
Now add 1 cup water and salt.Stir well.Let it come to boling point and then add fresh milk cream and fried okra into it.
Cook for 3 to 4 minutes in low flame by closing the lid.It will make the okra absorb the spices well.
Garnish with some fresh coriander and the very delicious okra masala curry/bhindi masala curry is ready.It is one of the most delicious okra recipe to must try.
