How to make Achari aloo /Achari aloo recipe

Welcome to my veg kitchen.The season of mango is here and so many food and recipes are in mind but what we wait for is pickles..When it comes to pickle, its a real bonus to food..The recipe I have brought today is pickled potato which is called as achari aloo..I would say the name justifies the taste and flavors really well..

Achari simply means a potato curry which taste like pickle yet is served as a delicious curry..The good part about this recipe is, it is a combination of both curry and pickle and the taste is just mouthwatering with the flavors and spices used..I would say the taste is a bit sour and of course as it is called as pickled potato or achari aloo, the taste must justify the name.
When it comes to achari aloo, everyone’s recipe is different..I tried to make it in a balanced way to avoid any accessive flavor or taste..So I used minimum and basic ingredients,those are also used in pickles to give it that extra yum and pickly taste.I have used midumly sour raw mangos to get the balance in taste.
This is a very simple 10 minutes recipe if you already have boiled potatoes in your fridge. 6 medium sized boiled potatoes
1/2 cup mediumly sour raw green mango
1 small tomato
5 to 6 garlic
1 teaspoon fannel seeds
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
2 table spoon tomato sauce
3 tablespoon mustard oil
1 and 1/2 teaspoon salt/according to your taste
Method to make achari aloo
Start by cutting the boiled potatoes into half..keep it aside and then make a paste of chopped mango, tomato and garlics
Now take a pan…add mustard oil into it..make it really hot until the bubbles are completely gone to avoid any accessive flavor..then add the mustard seeds,funnel seeds and fenugreek seeds into it.
As soon as it pops, put the gravy you prepared..mix well..cook in medium flame until the water content of the gravy dries up..make sure to stir frequently..you can adjust the flame to low if necessary..
Now add 1/2 cup water and salt..mix well and then put the potatoes into it..cook in low flame for 2 ro 3 minutes..then add the tomato sauce..stir well using a spatula to avoid mashing up the potatoes..adding tomato sauce into it, gives a perfect balance in this salt and sour dish..
