Vegetable masala curry recipe/Indian curry
Vegetable Masala is a classic Indian curry each and every home swear by.It is a combination of vegetables and spices.It is most favorable for lunch or dinner.Eveeyone uses different seasonal vegetables o make vegetable masala curry.I have added some solid ones gives it the most delicious taste including some leafy greens like spinach.
Do use these four basic vegetables while making vegetable masala curry.Apart from this,you can also use green peas,carrots or beans.Masala vegetable curry is a great idea to use the small quantities of vegetables left inside the refrigerator when you are confused which one to make because of the less quantity.

Ingredients to make vegetable masala curry
2 chopped aubergine/brinjal
Some chopped cauli flower
2 chopped potato
2 bunches of spinach leaves
2 chopped onions
2 chopped tomatoes
1 tablespoon ginger garlic paste
Some curry leaves (optional)
1 and 1/2 teaepoon Chilli powder
1/2 teaspoon turmeric powder
1 tablespoon coriander powder
1 teaspoon garam Masala
1 tablespoon mustard seeds
1 teaspoon cumin seeds
3 tablespoon oil
Directions to make vegetable masala curry
Start by preparing and choping the vegetables.
Chop the tomatoes and onions.Now put a pan on the gas,add oil.Let the oil be hot completely and then put the mustard seeds and cumin seeds.Then add the chopped onions and ginger garlic paste.
Cook the spices for 2 minutes and then add tomatoes.
Now put the dried spices like red chilli powder,turmeric powder,coriander powder and garam masala.Mix all the ingredients well in low to medium flame.Cook for few minutes until the tomatoes become soft.
As soon as the tomatoes become soft put potatoes and cauliflower and mix well.As both of these veggies take more time to be cooked than aubergine/began or spinach leaves, semi cook it by adding 1 cup water before putting the other vegetables.
As these vegetables become semi cooked,put the chopped aubergine/began and after few minutes put the spinach leaves.
Now mix all the vegetables well.Add salt and 1 cup water more to cook the vegetables nicely.The texture must be semi liquid at the end.Cook the vegetables in low to medium flame by closing the lid until it is fully cooked.
Now as you can see the vegetables are almost cooked up.Cook for 2 to 3 minutes more and the delicious vegetable masala curry is ready.Serve hot with rice or your favorite tortilla.Stay tuned for more delicious Indian food and recipes.
