How to make Gobi paratha/Gobi paratha recipe

Back again with another delicious Indian food recipe and this time its one of my favorite and the super tasty Gobi paratha..So before discussing more about this recipe let me introduce this dish to my audience from other countries..Gobi paratha is a type of Indian unleavened Flatbread stuffed with a yummy mixture of grated cauliflower (gobi) and other spices..

This mouthwatering Gobi paratha combines the best with dahi/curd..As we all know there are varieties of parathas are being prepared and this is one of the tastiest and easy to make..Indian food and dishes are incomplete without spices and flavors..There are no wonder ingredients needed to make this yum..the preparation of dough is normal, just like the daily wheat flour dough that we prepare.

During the season of cauliflower,this stuffed unleavened Flatbread is mandatory..Apart from this, cauliflower is a multipurpose veggie and many other dishes are being prepared..varieties of curries like the Gobi dum, Gobi masala,Gobi pakora and so many.
Coming back to the topic,minimum ingredients needed to make this paratha.so, let’s start by listing the ingredients-
Ingredients
1 medium sized cauliflower
3 green chilli finely chopped
Some finely chopped parsley leaves
1 tablespoon grated ginger
Salt 1 flat table spoon
3 table spoon oil
This is the basic ingredients I have used which makes this Gobi pararha balanced in taste..No powdered spices added.If you wish, you can add 1/3 teaspoon turmeric powder for color.
The dough for Gobi paraths is the usual wheatflour dough which we prepare using whole wheat flour, 1 teaspoon salt and water..just make a regular semi tight dough before 15 minutes by slowly adding water and knead well for a break free dough.
Process to make stuffing
Firstly chop cauliflower into very thin and small pieces, also you can make it small in pieces just by grinding once or twice to save your time.Now Take a pan,let it be dry completely and then add the oil..let the oil be hot and then add chopped ginger, chillies and parsley leaves into it..mix well for some seconds and then add the cauliflower..mix well.. add salt.
Roast the cauliflower on high flame for 3 minutes using a spatula until the edges starts getting golden..and then switch the flame to low and wait until it becomes soft.but don’t forget flip time to time.it will take maximum 10 to 15 minutes.
Now as you can see the texture is dry and well cooked..keep it aside to cool down a bit..Now put your flat pan on the gas and heat on high flame..grease with oil a bit..roll the tortilla balls , a little bigger than the normal ones, so that the stuffing sticks well..add 1 and 1/2 full tablespoon of stuffing and than close the top by gathering the edge together.I couldn’t upload the exact picture while cooking somehow..but yes the process to stuff and roll is exactly how I have explained.
Note-dont try to roll the paratha/Flatbread too thin orelse the stuffing will come out from the sides.
Now put it on the pan..flip after some seconds..spread 1 tablespoon oil..flip to the other side and spread another 1 tablespoon of oil..roast in low to medium flame by pressing the oil spoon gently and flipping time to time until it gets cooked from all the sides well.
