The cooking procedure,the ingredients and the spices to make potato moringa curry is simple. During my childhood I used to wonder about how to cook those hard stick like veggies but eventually I learned the correct way to cook moringa from my mom..
Moringa can be cooked solely as well as can be mixed with some other veggies like potato or brinjal/aubergine.The hard part of the stick is peeled and removed to cook easily.
How to eat moringa sticks
If you ever question this to yourself,simply take the cooked moringa,scrape the insides using your theeth and remove the hard part away.I prefer rice or roti/Flatbread with moringa curry.The taste is absolutely delicious.
8 peeled and chopped moringa sticks(chopped in 3 to 4 inches long)
2 small chopped potatoes
3 table spoon cooking oil
1 tablespoon gram flour
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
1 tablespoon coriander powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 cup tomato puree (2 tomatoes)
1 teaspoon grated ginger
1 and 1/2 teaspoon salt
Water 3 cup for boiling
Put an oval pan on the gas,let it be dry completely, add oil and then put the mentioned quantity of mustard seeds and cumin seeds.As it starts to pop.Pour the tomato poree and grated ginger. Add gram flour,chilli powder,turmeric powder and coriander powder into it..mix all the ingredients well and cook in medium flame until the water content of tomato dries up.Then add 3 cups of water.Stir nicely and then put chopped moringa and potatoes.Add the salt.Wait until it starts to boil..Firstly boil in high flame for 3 minutes and then lower the flame and close the lid to cook well.Check the curry after 10 to 12 minutes if the veggies are soft and if not,cook for few minutes more if needed.
The texture and consistency should exactly as the picture shows..A little soupy would be perfectly fine.And the delicious potato moringa curry is ready.👍
