Carrot rice

Carrot rice is a delicious twist to the regular plain rice.It is a flavorful and simple rice recipe made using cooked rice, grated carrots and other flavorful ingredients.When it comes to food, there is no end to varieties and recipes.Specially rice in India is cooked in so many ways, such as fried rice,pulao,spinach rice,carrot rice and other.Even rice is used as stuffing to make rice paratha/Flatbread. The finest part of this recipe is, it can be cooked effortlessly and yet the taste is so authentic.

This recipe is a perfect combination of health and nutrition . I have added cashews to give it a more nutty taste.This recipe can definitely be a part of the recipes with leftover rice.But also you can specially make this dish by cooking fresh rice.While often getting confused on how to use leftover rice, this recipe is a great way to give the rice an extraordinary taste and flavor.This exotic carrot rice has a similar taste to pulao because of the flavor but it is a less ingredient dish cooked within minutes.It is an appropriate dish for lunch box as the flavors and taste remain intact after few hours too.

So, let’s start making carrot rice by listing the ingredients first-

Carrot rice-Ingridients

2 cups cooked rice

1 cup grated carrot

50 g.m cashews

1 small cinnamon stick

1 bay leaf

1 tablespoon cumin seeds

2 tablespoon clarified butter/ghee

1 and 1/2 teaspoon salt

Note-

Make sure to not skip on cinnamon stick and bay leaf because the flavors combines really well with this rice recipe.

Directions

Start by putting an oval pan/kadhai on the gas.Now add the ghee/clarified butter.Let it melt and become warm.Now put the cumin seeds,cinnamon stick and bay leaf.Let it be golden brown.

Bay leaf,cinnamon stick and cumin seeds has been added into the ghee.

Now as it turns golden brown,add the chopped cashews to roast a bit.Then put the grated carrots.

Now as you have put the carrots, cook in medium flame until the raw smell of carrots subsidies.Cook for 3 to 4 minutes in medium flame only.Now add the cooked rice into it.

Cooked rice has been added to the sautéed carrots and spices

Now add salt and gently flip from every side until all the ingredients mix up well.Now transfers it to your plate and taste this exotic carrot rice.You can combine it with raita or daal fry.Even a solo bowl of this humble rice dish is too authentic.Do try this Indian cuisine and make sure to share the recipe with friends and family.
