Chole aloo being an organic homely delicacy is an appropriate food to start your day with.Not only the taste but also the health benefits of chickpeas/chole makes it one of the most appreciated food in the legumes family.Chole aloo can be great for anytime of the day.

Although you can find delicious chole aloo in hotels and restaurants,home cooked foods always give you the freedom to choose your ingredients according to your choice.I really appreciate home-cooked food and so chole aloo is one of the classics from Indian cuisine.

Ingridients to make chole aloo

2 cup chole/White chickpeas

2 Chopped and peeled potatoes

2 small Chopped onions

2 small Chopped tomatoes

7 to 8 Chopped garlic

1 teaspoon grated ginger

1 teaspoon mustard seeds

1/2 teaspoon turmeric powder

1 teaspoon red Chilli powder

1 teaspoon Kashmiri lal Mirch

1 tablespoon garam masala

1 tablespoon coriander powder

1 and 1/2 teaspoon slat

1 Bayleaf

1 dried red chilli

4 tablespoon mustard oil

Note-

The above mentioned ingredients are according to five people serving.Change the ratio according to your requirements.Make sure to not waste food.

How to make chole aloo

So let’s begin the process of making chole aloo by simply soaking up the chole overnight.It softens the chickpeas and helps in easy cooking.The basic rule is to soak it for 8 hours before cooking.So do it according to your time of cooking.

Now take a pressure cooker, add the soaked chickpeas and chopped potatoes.Double the quantity of water, add 1/4 teaspoon of sodium bicarbonate/soda to cook the chickpeas.Close the lid and put it on high flame.let it whistle for 6 to 7 times.Adding just two pinches of sodium bicarbonate helps soften the chickpeas.As it gets boiled,strain the water completely.

The potatoes and chickpeas must be soft to get the correct taste and texture.Now put a pan on the gas.Put it on high flame.Add mustard oil.Make sure to cook the mustard oil first.This might sound weird but mustard oil has a strong flavor and takes more time to be cooked than other oil.To know if it is well cooked.Check if the bubbles formed are gone completely.This is a trick to cook your food in mustard oil without getting that raw flavor of mustard.Now put the mustard seeds,bay leaf and dried red chilli.Than add the Chopped onions,grated ginger and garlic.Cook in low to medium flame for 2 minutes.

Now put the Chopped tomatoes.Mix well and than add the chilli powder,turmeric powder,coriander powder and garam masala.Mix well and cook on medium flame.Stir well.Cook for 2 to 3 minute until it become smooth in texture and the oil starts releasing.

Now as you can see the spices to make chole aloo are well cooked.Now pour 2 cups aof water.Stir well.Add the boiled chickpeas and potatoes.Add salt and mix well.As soon as it starts to boil, put the Kashmiri red chili powder.

Now close the lid and let it be cooked for another 5 to 7 minutes to let the spices blend well with potatoes and chickpeas.It will start to thicken.Mash the potatoes a bit for a more thicker texture.And the delicious chole aloo is all set to be on your plate.
