Mangodi sabji is a traditional rajasthani cuisine and a very delicious curry type.This Indian curry is made using dried lentil dumplings.

How to make Mangodi
The preparation of mangodi begins by soaking the yellow split lentils for 8 hours and then making a thick paste out of it by straining the water.Other spices like cumin seeds,red chilli powder and salt are added.
The paste is then squeezed using a plastic cone on plastic sheets for easy removal.Mongodi is then dried up directly under the sun until it turns all crispy to break.It is then preserved to make curries and other dishes.
As I have heard from the elders in my family,the primary purpose to preserve food like mangodi is to have delicious curries during the times we run out of vegetables.It is a great option as well as soo delicious.
Apart from making mangodi sabji/curry, it is also used to make mangodi kadhi and also used in mix vegetables.
Ingredients to Make Mangodi sabji/curry
The ingredients and spices to make mangodi sabji is simple,regular spices with some finely chopped tomatoes,onions and ginger garlic paste is used with a tadka of curry leaves.
1 and 1/2 cup mangodi
2 finely chopped tomatoes
2 finely cooped onions
1 tablespoon ginger garlic paste
10 to 12 curry leaves
1 and 1/2 teaspoon red chilli powder
1/2 teaspoon turmeric powder
1 tablespoon coriander powder
1 teaspoon cumin seeds
Salt to taste
3 tablespoon oil
How to make Mangodi sabji
Start making mangodi ki sabji by putting a kadhai or pan on the gas.Let it be dry completely.Add oil.As soon as the oil becomes hot put the cumin seeds,curry leaves and ginger garlic paste.Stir well.Cook for few seconds and then add the chopped onions and tomatoes.Mix well again.add turmeric powder,chilli powder and coriander powder.
Cook well in medium flame.Keep stirring time to time.Cook until the oil is on top of the spices mixture prepared to make mangodi Sabji.
Now add the dried mangodi into the spices..Mix well.Add 3 cups of water to cook the mangodi.add salt.stir well.Now close the lid and cook mangodi Sabji until it turns soft.The texture must be like the picture below.
