What is Kadhai Paneer
Kadhai paneer is a rich Indian cuisine made using paneer and other flavorful spices and ingredients.As the name defines, kadhai refers to an Indian cookwear which is oval in shape and is popularly used for cooking curries and for deep frying and paneer refers to the Indian cottage cheese which is made using whole cow milk and thereby curdling it and then setting it to make paneer.
Kadhai paneer is fully cooked in kadhai/ovel pan and that is why it is named as kadhai paneer.Because of its extraordinary taste, it is one of the most loved paneer dish.
Ingredients to make Kadhai paneer
250 g.m paneer
4 chopped onions
2 chopped tomatoes
1 chopped capsicum
1 tablespoon ginger garlic paste
1 badi elaichi/large cardamom
2 inch stick cinnamon
4 to 5 black pepper balls
1 tablespoon coriander power
1 and 1/2 teaspoon red chilli powder
1/2 teaspoon turmeric powder
1 tablespoon cumin seeds
1 tablespoon paneer masala
1 tablespoon salt
4 tablespoon oil
2 tablespoon butter
2 tablespoon fresh cream
Preparation to make Kadhai Paneer
Start the preparation of making kadhai paneer by making a paste out of chopped onions and cumin seeds.Trasfer it to a container and make a puree of the chopped tomato.If you don’t have ginger garlic paste readily available,you can grind 2 tablespoon of chopped ginger and 10 garlic while grinding onion and cumin.
Put all the spices together in a plate for easy cooking.Chop the paneer into cubes.
Now as the initial preparation is done, let’s go through the directions to make kadhai paneer.
Directions to make Kadhai Paneer
Take a Kadhai,put it on high flame.Let it be completely dry.Add oil and butter simultaneously.let it be hot.Now put the onion and ginger garlic paste.Stir well in high flame.Then add the black pepper balls,badi elaichi and cinnamon stick.Mix all the ingredients well.Cook the spices in medium flame.
This picture is taken when the spices are almost about to be cooked.So cook the spices in medium flame by stirring consciously time to time until the oil comes out and the water content of onions dry up.At this stage add the tomato puree and other spices like chilli powder,turmeric powder,coriander powder and paneer masala.Mix well.
As the spices starts to dry up, add the capsicum and mix well.Again cook in medium flame until the oil comes out on top of the spices.This is a clear sign of the spices being cooked up well.
As the spices are well cooked, add 1 and 1/2 cup water and salt.Stir well.Add paneer cubes and fresh cream.Mix well.Cook for another 4 to 5 minutes by closing the lid to let the spices blend nicely.Now as you can see a semi thick delicious kadhai paneer is ready.
Now as the mouth melting dish is ready, combine it with roti or rice including Naan or kulche.
