Aloo sabji/Potato curry is one of the simplest, tastiest and go to curry, anyday and anytime.This simple and tasty curry needs least efforts to cook.

It feels overwhelming to write down on this recipe because the first time I was introduced to cooking by my mom, I think aloo ki sabji is the first curry that I learnt.

This is a one pot quick potato curry recipe which turns out really tasty.The ingredients I have used are really simple and easily available.I have added good quantity of parsley leaves to give it a flavorful and leafy taste.

So let’s prepare this Indian style quick and delicious Aloo ki sabji/Potato curry.

Aloo ki sabji



4 chopped unpeeled potatoes

1 bunch chopped parsley leaves

1 chopped tomato

1 tablespoon grated ginger

1 and 1/2 teaspoon chilli powder

1/2 teaspoon turmeric powder

1 flat tablespoon salt

1 teaspoon mustard seeds

2 tablespoon mustard oil

Note-Using mustard oil gives it a very warm flavor and taste.

How to make aloo sabji/Potato curry

This Indian style potato curry is a quick savory.Combine with rice or roti and its amezing.Cooked in basic and simple ingredients, it tops the list of one of those easy to make curry recipes.

Start by putting a pressure cooker on the gas, let it be dry completely.Now add oil,While using mustard oil, make sure to cook the oil first to avoid any accessive flavor.To do that,heat the oil until the bubbles are completely gone.

Now put the mustard seeds and grated ginger.let it pop and then add the chopped tomatoes and chopped parsley leaves/dhania patti.Cook well.As soon as the tomatoes become soft,add potatoes and spices like chilli powder and turmeric powder.Mix well and cook for another 2 to 3 minutes in medium flame.

Now add 1 and 1/2 cup water and close the lid.Let it whistle for 3 to 4 times and the very authentic potato curry is ready.
