Aloo baigan sabji/potato aubergine curry

Aloo baigan sabji is a classic combination of vegetables which can be cooked in a simple manner and also can be cooked spicey.


This is a very regular curry in Indian homes.The good part about the recipe today is, it is a one pot quick recipe.Whenever in a hurry or tired to put efforts ,this effortless also brigantine sabji in rescue.




Aloo refers to potato and baigan refers to aubergine.It is a quick and sinple to cook curry with basic ingredients.Regulat spices has been added with some chopped green chilis on top.

Aloo baigan is cooked in so many different ways, some prefer it a bit spicy to other like it simple.The recipe I have brought today is the simple one.A 10 minutes recipes when the ingredients are ready.





Ingredients to make aloo baigan

3 to 4 medium sized chopped potato

2 chopped aubergine/brigant

1 chopped tomato

3 tablespoon oil

1 tablespoon ginger garlic paste

1 teaspoon chilli powder

1/2 teaspoon turmeric powder

1 teaspoon mustard seeds

Salt to taste

2 to 3 finely chopped green Chilli

How to make Aloo baigan

Aloo baigan ki sabji

It takes least effort to make aloo baigan ki sabji.As it is a one pot recipe, which is directly cooked in pressure cooker.Start by putting a pressure cooker on the gas and add oil.

Add 1 teaspoon mustard seeds, let it pop,add ginger garlic paste.Saute well.Now put the chopped tomatoes and mix all the ingredients well.

Now as the tomatoes become lightly soft,put the chopped potatoes and aubergine.Mix well.Now put the the chilli powder, turmeric powder and salt.Again stir the ingredients nicely and add 1 and 1/2 cup water for cooking the curry.

Preparing aloo baigan sabji/curry

Now close the lid of the cooker and let it whistle for 2 to 3 times.As soon as the whistle settles,garnish with some chopped green chilli and serve hot with rice or roti.

NOTE-While cooking directly in a pressure cooker ,it is important to chop the veggies according to their cooking time.While making aloo baigan ki Sabji,make sure to chop the potatoes thinner than aubergine to keep both the veggies intact without mashing it up because aubergine gets cooked sooner than potatoes.
