Roasted mix vegetable is a delicious Indian delight and a regular good in Indian homes.As the name says, this dish is a mixture of vegetables seasoned with few Indian spices.Roasted in mustard oil, it is an authentic veg delight on your plate.

This easy to make mix vegetable needs no specific vegetables.It is a great way to use small quantity of vegetables left in your fridge and the mehd mentioned below would be same.Indian spices are the taste enhancer to this dish.

I have used aubergine/baigan,potatoes,pointed gourd/parval and tomatoes.This dish can be consumed anytime of the day with dal rice or roti/Flatbread.

Ingredients to make roasted mix vegetable

2 aubergine/baigan

1 medium sized potato

5 to 6 pointed gourd

1 tomato

1 and 1/2 teaspoon red chilli powder

1/2 teaspoon turmeric powder

1 table spoon Dhani powder

1 and 1/2 teaspoon salt

1 teaspoon mustard seeds

3 tablespoon mustard oil

NOTE-Using mustard oil while sautéing vegetables gives it a very warm color and flavor.

Start making roasted mix vegetable by keeping your vegetables washed,chopped and ready.Put a pan on the gas, let it be completely dry and then add the mustard oil.Let the mustard oil be really hot until the bubbles formed are completely gone.Add mustard seeds.let it pop.Now add all the chopped veggies into it.Mix using a spatula.Add salt and turmeric powder.Flip nicely from every side.Roast on high flame until the edges turns golden.Then add the chilli powder and coriander powder.Mix well.Switch the flame to medium as chilli powder and coriander are quick to be burned.Close the lid for few minutes until all the veggies are soft to touch.Dont forget to flip time to time.
