Ingredients to make roasted eggplant
1 long chopped eggplant(As per your requirement)
1 tablespoon gram flour
1 and 1/2 tablespoon coriander powder
1 teaspoon chili powder
1/2 teaspoon turmeric powder
1 pinch asafoetida/ hing
1 and 1/2 tablespoon oil
1 and 1/2 teaspoon salt
Water as required
1/2 cup semolina/rawa for the coating
How to make roasted eggplant
Start by taking an oval plate for the easy dipping of eggplant.Put gram flour,chilli powder,coriander powder,turmeric powder,salt,asafoetida,oil,and a very small quantity of water to make a semi thick paste.
Now preheat a pan on low to medium flame.Take a plate and pour semolina to coat the eggplants.Dip each piece of eggplant or spread the paste using a spoon and thereby coatung it with semolina.
Now grease the pan using oil and put eggplant pieces one by one according to the size of your pan.Make sure to not suffocate with so many pieces ,so that you can easily flip and roast.pour 1/2 tbespoon oil around each pieces and let it be cooked in medium flame from both the sides.
Use the spatula to put a bit pressure on the eggplants, so the water can be released and cooked quickly.Roast until the eggplants turns soft and light golden.Remove it to a plate,squeeze some lemon juice,sprinkle chopped green Chilli and enjoy.
