What is baigan dal?
Baigan dal is a protein rich lentils curry made using simple and easily available ingredients in the kitchen.Lentils in india has been a huge part of its culinary culture.The dishes prepared using lentils are uncountable and delicious.One of the best way to cook lentil is, to mix it with vegetables or with a single vegetable like Eggplant.And the outcome of this combination is absolutely authentic.Altough cooking lentils differs from person to person,baigan dal is a popular homely recipe that can be cooked effortlessly.
I have used yellow lentils to cook this lentils curry and the taste is absolutely delicious.This baigan dal can be combined with rice/chawal,roti/tortilla.It is an appropriate bowl of health and nutrition for anytime of the day.

Baigan dal is a traditional recipe and is prepared using simple kitchen ingredients that are easily available.So before proceeding to the instructions, let’s go through the ingredients-
Ingredients
2 medium sized Chopped Eggplants-Chop the eggplants in mediumly thin slices, so that it gets cooked easily.
1 cup yellow lentils-Lentils are a great source of protein and hence a great choice for all the people opting for a vegetarian diet.
2 Chopped onions-onions add the perfect flavor and tatse to baigan dal.
1 Chopped tomato-Tomatoes are appropriate to make the baigan dal flavorful.
1 bay leaf-Bay leaf is a flavorful herb that not only adds flavor to your curries but also has many health benefits such as improving digestion and controlling diabetes.
1 teaspoon chilli powder-to spice up the tatse of baigan dal, don’t forget to add chilli powder.
1/2 teaspoon turmeric powder-turmeric powder is a medicinal yet flavorful spice and the benefits can be easily reaped through curries and other dishes.
1 teaspoon grated ginger-A perfect spice to enhance the flavor of baigan dal.
3 tablespoon mustard oil-Mustard oil is one of the best oil for curries because of the warm flavor of mustard it offers.
1 teaspoon cumin seeds-Cumin seeds adds the perfect crunch of flavors making every bite delicious.
1 flat tablespoon salt/As required
Instructions
Before making baigan dal,make sure to soak the yellow lentils 1/2 an hour before cooking.Wash off the yellow lentil well.Now boil the lentils using a pressure cooker by adding 1 and 1/2 cup water and the mentioned amount of turmeric.Close the lid and let it whistle for 3 times.Yellow lentils take less time to be cooked in comparison to other varieties.

Now let the whistle settle.Put an oval pan on the gas.Let it be dry completely.Add oil.Heat on high flame until the bubbles formed are gone.Add cumin seeds,grated ginger and bay leaf.As the cumins turn golden, put the Chopped onions.Cook on medium flame until it becomes slightly golden.
Now put the Chopped tomatoes and chilli powder.Mix well.Cook on medium flame only.Stir the mixture well until the tomatoes become soft in texture.
Now as the mixtur of spices are well cooked,Add the Chopped Eggplants.
Mix well and add just 1/2 cup water to cook the eggplants.Eggplants take less time to be cooked.Close the lid and wait until the eggplants turn soft.Be mindful while adding water,as the cooked lentil has already water in it.

As soon as the eggplants are well cooked, pour the cooked lentils into it.Stir well.Add salt and let it boil for 3 to 4 minutes more to let the flavors come out nicely.It also makes the spices blend with other ingredients well.
