What is flattened rice
The process of making flattened rice involves parboiling the rice, then flattening it into thin flakes. These flakes are then dried, resulting in a lightweight and easily digestible product. Poha comes in different thicknesses, with thinner varieties requiring less cooking time.
To prepare poha, the rice flakes are typically rinsed briefly to remove any dust or impurities and then soaked in water for a few minutes to soften if needed. They are then drained and mixed with various ingredients such as onions, green chilies, curry leaves, peanuts, and spices like turmeric, mustard seeds, and cumin seeds. This mixture is sautéed in oil until the flavors meld together, resulting in a fragrant and flavorful dish.
